FAQs (Frequently Asked Questions)

Products

Where are the products from?  >>Our fish and seafood products are responsibly sourced mainly from our partner community in Lubang, Mindoro. We also occasionally source from communities in Busuanga, Sorsogon, Masbate, and Mindanao who also practice responsible sourcing of seafood. While these communities are handled by different organizations, Tindagat helps them reach a wider target market for more people to enjoy.

What do each cuts of the fish mean?  >> **Please note that all fish are cleaned, gutted, scaled, and weighed after post-processing**
- Head: The fish head is split right in the middle. The most tender meat is usually found right behind the gills.
- Steak: Fish steak is a cross-section cut of the fish, cut across the bone.
- Fillet: The fillet is the boneless part of the fish cut in parallel to the bone. Fillets from a big fish can be cut further into smaller pieces.
- Belly: The belly is the most flavorful and thinnest part of the fillet, containing healthy fat.
- Tail: The tail is the fleshy back end of the fish and is usually split right in the middle.

Are they boneless?  >> Fish bones, scales, and guts are removed by our partner community as part of post-harvest processing. This makes it more convenient to cook it with less preparation needed beforehand. However, for whole fishes, bones are not taken out to retain the form of the fish.

What is the shelf life of the fish?  >> The shelf life of our products is 3 months, as long as it is kept frozen. Packs are vacuum-sealed to help extend shelf life and freshness.

How can I cook the fish?  >> - Head: stock/broth, soup, grill, or bake
- Panga: stock/broth, soup, grill, or bake
- Fillet: grill, bake, broil, pan-fry, poach
- Steak: grill, broil, pan-fry
- Belly: gill, pan-fry, saute, bake, roast
- Tail: stock/broth, soup, grill, or bake
